Tweaking Ingredients to Save Big

A story I wrote this week offers six ways to eat better for less. The cooks and bloggers I spoke with offered great advice, from making better use of eggs to creatively reinventing leftovers. My own techniques involve making small changes to recipes to make them more affordable without sacrificing taste. Here are my three favorite inexpensive recipes, all slight variations on the Barefoot Contessa originals:

Easy Healthy Soup

Black Bean Soup

Try this recipe..It's great!

Two cans of drained black beans

One can of Tomatos w/ Green Chilis (Rotel)

Cilantro

Chopped Onion

Garlic

Lime Juice

Seranno Pepper

Chicken Stock

Put all Ingredients in a blender or food processor and blend toogether. Pour contents into pot and cook until heated through.

Serve over white rice.

Excellent flavor and extremely easy to make, not to mention very budget friendly.
