Sounds like a recent episode of Scrubs!
But yeah, brinner (breakfast for dinner) is both awesome and economical. Also, yes, pancakes from scratch are relatively cheap, and you have the option of using higher quality or healthier ingredients, such as (heart-healthier) canola oil, and whole wheat or organic flour.
Also, they taste MUCH better than pancakes from a mix.

anyone out there have a good pancake recipe to share?
Patsy Long of GA left this one, which uses leftover mashed potatoes, as a comment on another post, it sounds delicious:
You can take 1 cup, or less of mashed potatoes and make a platter of potato pancakes.
Mashed potatoes
egg
onion ( if desired, to taste)
2 or 3 tablespoons of flour (enough to hold mixture together)
shredded cheese (optional)
Mix all together and spoon heaping tablespoons of mixture into lightly greased frying pan until brown on each side.
I raised 3 boys on this and they loved it.
